A daiquiri proves its power with just rum, sugar, and lime. This version adds fresh shiso leaves for an herbal note that pairs perfectly with rum. If you use red shiso, the drink turns a vibrant pink. For a deeper flavor, steep a few shiso leaves in the rum for at least 30 minutes before shaking.
The syrup can use white sugar, but soft light brown sugar adds a warmer, richer finish that complements the lemongrass. This recipe comes from Abie Lamin, general manager of Cafe Kowloon in London.
